Recipe: Avocado cream toast with lobster and tomatoes

We kick off our Friday recipes with this summer favourite: our Avocado and Lobster Cream Toast.

The good weather is here, and with it, fresh ideas for a light summer dinner. A simple and delicious recipe, with top quality products, perfect to give a select and attractive touch to your meetings.


  • 1 Lima
  • 2 lobsters
  • Extra virgin olive oil Nº3 Elizondo
  • 3 avocados
  • 1 spring onion
  • 1 bunch of chives
  • Cilantro
  • 100ml whipping cream
  • 4 tomatoes
  • 1 red chilli
  • Ground pepper
  • Salt flakes
  • Sliced wholemeal bread


Cook the lobsters and clean them from their shells. Then, we chop the tails finely. On the other side, chop the tomatoes and season with the finely chopped spring onion, olive oil and salt. Then mix this preparation with the whipped cream.

Mash the avocado with the coriander, lime, olive oil, salt and a touch of pepper until the desired flavour is achieved.

For the base, use a good slice of wholemeal bread, and toast it in the oven.
